Ingredients

  • 2 1/2 pounds peeled pumpkin or butternut squash, cubed
  • 1 yellow onion, wedged, and 5 peeled garlic cloves
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt and 1/2 teaspoon pepper
  • 1 tablespoon chopped fresh sage
  • 2 cans cannellini beans, rinsed
  • 4 cups low-sodium broth
  • 1 teaspoon apple cider vinegar and 1/4 teaspoon nutmeg
  • 1/2 cup cream or unsweetened oat milk, optional
  • Pumpkin seeds and bread for serving

Instructions

  1. Heat oven to 425°F. Spread pumpkin, onion, and garlic on a lined sheet pan. Toss with 2 tablespoons oil, salt, and pepper.
  2. Roast 30 to 38 minutes, turning once, until tender and browned. Remove garlic early if it darkens.
  3. Warm remaining oil in a pot over medium heat. Stir in sage for 30 seconds.
  4. Add roasted vegetables, beans, broth, vinegar, and nutmeg. Simmer uncovered 12 minutes.
  5. Blend smooth. If using a standard blender, work in small batches, vent the lid, and never seal hot liquid in a closed jar.
  6. Return to low heat. Add cream or oat milk if desired. Thin with broth, then adjust salt, pepper, and vinegar.

Storage

Refrigerate cooled soup up to four days. Freeze without cream up to three months. Thaw overnight, reheat gently, and add cream afterward. Use plain pumpkin, never sweetened pie filling.
